Dosage & corking
Dosage (liqueur d’expedition) is a mixture of base wine, sugar, brandy or spirit (max. increase of 0.5 %), plus around 30 mg/l SO2, meta-tartaric acid and/or sorbic acid. The amount of sugar (or rectified concentrated grape must) in the varies depending on the final wine style required.
Sparkling wine corks are composites, with 2 or 3 shives of natural cork and can be coated with silicon or paraffin wax. Wire muzzles should be used to secure the cork in place.
Wines generally need 1 month ‘pour le marriage’ to allow flavours to develop.
