Chemical Instability
In order of importance, chemical instabilities (or casses) can be caused by:
- Potassium bitartrate
- Protein
- Phenolics
- Copper
- Iron
Hazes can also be due to aluminium, tin, lead or zinc precipitations if there has been accidental contamination, but this rarely occurs.
Wines must be checked before bottling to see if the wine is susceptible to these problems.
