Critical aspects of sparkling winemaking

Aimed at more experienced winemakers. It will cover key areas where quality of sparkling wines can be enhanced: Targeting style and direction Harvest parameters Fruit processing Acidity control Factors affecting foam stability Achieving complexity.

Your trainer for this course will be Peter Morgan. Peter Morgan he has a B.Sc degree in Food Science and is a graduate of Plumpton College. His winemaking interests started in 1999 when he became the winemaker at a boutique vineyard and winery in Gaillac, SW France. After graduating from Plumpton he joined Davenport Vineyard and Ridgeview Estate Winery. He was winemaker at Nyetimber, from 2002 to 2004. Peter was winemaker and lecturer at Plumpton College for 10 years, between 2004 and 2014.
